A dough based on charcoal and organic spelt flour

On a hillside in the Apennines outside the city Assisi lies Molini Spigadori, which produces the vegetable charcoal from wood.

 

We use this completely natural vegetable charcoal powder together with organic dairy flour to give our pizzas and charcoal paste a beautiful natural black color.
